Please don't wear princess dresses on the beach.
Wedding parties - if you can, keep them small and delegate well. These people were chosen to help you - let them be
Kids - In or Out? ...especially if you have a formal evening event. appropriate.
Wedding Planner - A wedding planner can really be of great help, especially for destination weddings. Unless you have time to dedicate to organization and planning, it's best to hire a good wedding planner. Ask a friend for a recommendation. Happy to leave all the details to the professionals.
Theme - This should be decided after you choose the location. Let the venue guide your subject. Also, consider the season of the wedding and the time of day or night.
